Pink and Sweet Pinkie Pie Fruit Salad

Around here we love sweet and healthy treats. Any parent knows this duo is a winning combination for getting some good stuff into little ones. But lately we’ve been giving thought to the phrase, “we eat with our eyes.” Who ever coined the term, must have been a parent, because kids in particular can be swayed or nay-ed by the looks of a plate. This easy recipe has it all, sweet, check! Healthy, check! And pretty, check!

If you need more reason to try this one out, it’s also a great recipe to make with the kids, and can be made ahead and stored in the fridge for a couple of days. We’ve been eating it around the clock since it’s a great cold bite and uses the best of summer’s pink and red fruits. Just like Pinkie Pie, this fruit salad makes us feel “Yay yay so awesome!”

Pinkie Pie Super Sweet Pink Salad 

Serves 4

Ingredients:

1 cup of strawberries cut in half

1 cup of raspberries

1 cup of cherries

1 cup of plums diced

1 cup of red apple diced

1 small container of strawberry yogurt

3-4 tablespoons of good2grow apple juice

Directions:

Mix fruit together in a bowl, set aside.

In a small bowl mix together juice and yogurt. Stir until combined. If mixture is too thick, add in more juice so it’s thin enough to coat fruit.

Pour mixture over fruit, gently stir to combine and serve.

This recipe adapts well to any in-season fruit, so pick your faves and enjoy!
